Tired parsley

Parsley stemsParsley stems have a lot of flavor left in them.  Even with the prettiest leaves plucked off and used to adorn some delectable dish, the faded green leaves and the stems have something to offer.  They contribute to

Soup.

When the vegetables in my refrigerator are tired, when potatoes have sprouted eyes and the onions are sending out green shoots… soup is the answer.  Limp carrots, failing celery and one big ‘ole parsnip, core removed and chopped very fine…
